Chicken Fajitas and Peach Salsa

 

If anyone asks if I want to grab some food my mind immediately goes to what Mexican places are around.  Then if I've tried their fajitas.  I will never turn down a trip for deliciousness.  I'd like to think I know a good plate of fajitas. 

By no means do I make authentic Mexican food. Like, no where close.  BUT...it does taste good.   I am wimpy and can't handle spicy foods so by all means please add spices to this recipe!

Here is how I make my fajitas. 

Chicken Fajitas

-1 lb boneless, skinless chicken breasts, cut into strips

-1 onion, cut into slices

-1 each of red, yellow, orange bell pepper, cut into slices

-1 tbsp minced garlic

-2 tbsp teriyaki sauce

-1 tsp chili powder

-1 tsp cumin

-1/2 tsp salt, pepper

*Add oil to pan over medium heat and add in chicken.  Saute 3-4 minutes, then add in remaining ingredients.  If you like your fajitas spicy, up the chili powder and add in a jalapeno.  Saute over medium heat until cooked through.   Serve with warm tortillas and toppings like sour cream, limes, salsa, cheese, tajin, cilantro or pico!
