Summertime and Peach Salsa

I'll be the first to admit I'm not a fan of summer.  The heat and I are not besties.  However the Farmers Market and I are long lost lovers.  

I love browsing tables of fresh produce and imagining what I can make.  Here in Michigan peaches are definitely in season and I ended up with 5 pounds and no plan. Oops. I'm not a huge fan of warm fruit so besides smoothies I was trying to come with ideas.  As I'm pulling out stuff to make chicken fajitas (recipe coming soon!!) for dinner it hit me.  Peach salsa would be perfect to top fajitas.

Now I'm a Polish, Irish and English decent gal so Mexican food isn't exactly my forte.  Eating it, definitely.  So bare with me here but this turned out excellent!  This could top a number of things.  If you try it I'd love to know what you put it on!

As always stir a little magic into your cooking!  Put your good intentions into it.  

Peach Salsa

-3 peaches, peeled and finely diced

-1 jalapeno, seeded and finely chopped

-1/4 cup red onion, finely chopped

-Juice of 1 medium sized lime

-1/4 tsp. cumin

-1/4 tsp. garlic salt

-1 tsp. fresh or dried cilantro, to taste

Instructions:

Dice your peaches, onions and jalapeno and combine in a bowl.  Add lime juice and add seasonings. Adjust to your taste.  Cover and let sit 3 hours before serving, the flavors will meld together the longer you let it sit.

This made me about 2 cups which was plenty!
